These sweet, banana bread-like bars, with a touch of chocolate chips will encourage any hesitant breakfast eater to try one!

Breakfast is such an important meal of the day, but sometimes it’s hard to find something fast and easy.

When my future sister-in-law introduced me to this simple recipe, I knew I’d found a winner!

Add your ingredients in a bowl…

Mix everything together….

Smooth everything flat in a pan…

And bake!

Stores super well at room temperature, covered, for a couple days, or freezes for a later meal.

Oatmeal Banana Breakfast Bars

These sweet, banana bread-like bars, with a touch of chocolate chips will encourage any hesitant breakfast eater to try one!

Cook Time 30 minutes

Servings 9 bars

Equipment

  • 1 9×9 pan
  • 1 medium sized mixing bowl
  • 1 potato masher (a fork would also work, just takes a little longer)
  • 1 large spoon

Ingredients
  

  • 3 large ripe bananas about 1½ cups mashed
  • 2 cups rolled oats
  • 1/2 cup peanut butter
  • 1/2 cup chocolate chips
  • 1/4 tsp salt

Instructions
 

  • Preheat oven to 350°F.
  • In a bowl, mash the bananas. 3 large ripe bananas
  • Stir in rolled oats, salt, peanut butter and chocolate chips. 2 cups rolled oats, 1/2 cup peanut butter, 1/2 cup chocolate chips, 1/4 tsp salt
  • Stir until creamy and well mixed.
  • Add the mixture to a 9×9 baking pan and smooth the top flat.
  • Bake for about 20 minutes, until the edges are a little brown. The bars will be soft and somewhat crumbly until they fully cool.
