Bacon Cheeseburger Meatloaf

These little individual meatloaves are perfect sized for a meal and reheat later for easy leftovers.

Ingredients

Ground meat: We highly recommend our ground pork and ground beef and our neighboring farm’s ground lamb.

Bacon: Farm fresh bacon is the best.

Onions: Any onions work fine, we like yellow best.

Bacon grease: Saute your onions in the leftover grease from frying up your bacon.

Breadcrumbs: Homemade or store-bought work great.

Mustard and ketchup: Any brand of yellow mustard or ketchup is fine.

Worcestershire sauce: Adds a nice punch of flavor!

Salt and pepper: Of course

Eggs: Farm fresh is best!

Cheese: Cheddar tastes great and melts just right.

Dill weed: Makes it taste like dill pickles are right there on that cheeseburger.

Substitutions

You can use any ground meat for this, but we recommend the beef/pork/lamb to make truly unique and nutritious meatloaves.

Farm kitchen cooking tips

  • Cooking bacon can be messy. In our kitchen, I use a taller (usually very oversized for the small amount you need) kettle to help keep that grease from flying all over the stovetop. I also use a spatter screen which usually works pretty well.
  • Make sure to save the grease for sauteing your onions. Not only does it make the onions taste amazing, but it adds more bacon flavor to your meatloaves.

Equipment to use

  • A tall kettle helps keep that bacon grease contained.
  • A spatter screen is also great for helping with grease spatter.
  • Cookie sheets with sides keep the inside of your oven cleaner.
  • A nice big bowl for mixing together the meat and ingredients.

Storing leftovers

This recipe recommends making your meat mixture into little individual loaves. This makes it super easy to freeze as individual meals and warm up again later.

Equipment

  • 1 cookie sheet with sides
  • 1 large bowl
  • 1 saucepan

Ingredients
  

  • 1 lb ground beef
  • 1 lb ground lamb
  • 1 lb ground pork
  • 1 cup onion finely diced
  • 1 cup bacon cooked and crumbled
  • ½ cup bread crumbs
  • 3 tbsp yellow mustard
  • 3 tbsp Worcestershire sauce
  • 2 tsp salt
  • 1 tsp pepper
  • 5 tsp dill weed
  • 3 eggs
  • 1 cup cubed cheese
  • ½ cup ketchup

Instructions
 

  • Cut up the raw bacon into small pieces. Fry up and remove cooked bacon from grease.
  • Add raw onions to bacon grease and cook until soft.
  • Remove onions from heat and stir in mustard, Worcestershire sauce, dill, salt and pepper.
  • In a bowl, combine the ground meat, onion mixture, bread crumbs, eggs and cheese.
  • Mix thoroughly.
  • Form meat mixture into little loaves and line up on cookie sheets.
  • Rub a little ketchup on the top of eat loaf.
  • Bake for 20-25 minutes until inside temperature is at least 165℉.
